It's been 2 years all ready that we arrived in New Zealand, the Land of the Long White Cloud. Beautiful with all the green grass and lots of rain. Winter is on us which means lots of rain, hail and snow. Hopefully this year will be a milk winter but according to the Metservices we are in for a bad winter ... I can only hope it will not be the case. Constant rain and grey days makes me very depressed. I am a girl of Africa that loves my sunshine. now I am going to spend my days inside cooking trying to be creative with this new dieet Keto my daughter is trying to put us on no carbs and high protein and fats and lots of crochet ... making doggie jumpers, scarves and beanies. Planning on doing a market day with a range of doggie beds recycling old pallets/crates which I am helping hubby make. Actually I am doing most of the work, as his eye sight has deteriated so badly that he is struggling to read the tape measure. But we are getting there

We have made two sizes so far for inside dogs ... not going into the kennels making. For the pillows to fit I have made them to fit a regular pillow so recycling pillows is possible, you need to change pillows on a regular basis anyway.

I did not really make any this year cause I know how easy that falls by the wayside and we just revert back to our bad habits. Atleast I don't smoke or drink but I do swear a bit, drink way to much coffee and have a problem with the sweet stuff. We do try eat healthier meals. ATM my garden is just starting to really take off and hopefully I can freeze some veggies and preserve a few bottles this season. Our 6 remaining old hens produce 3/4 eggs a day ATM but they will soon need to be replaced with younger hens. So I know where some of our food comes from but we are far from being self sufficient like I would like us to be. Especially when it comes to our meat supply, maybe that is something I need to address ASAP
Our local life stock sales yard is not far away from us. But unfortunately I would have to find someone with a trailer and hitch on their vehicle to get a few sheep to our place .. hate having to rely on anyone but we don't have our own trailer anymore. Just another problem we need to address .. going from 2 vehicles with hitches and 2 trailers to 1 small sedan without a hitch. anyway that is life for you it knocks you down and you just need to get up and go again.
My daughter and myself did start a small home based baking business 6 months ago just to help with the daily bills. And low and behold she started to bake cupcakes and birthday cakes with all the pretty swirls and rosettes and designs. And she has done really well with that. Then we decided to start baking our traditional sweets and desserts to serve a bigger SA market here in Auckland, giving our customers a taste of home. That has paid off as so many people love our baking and have become regular customers. From thinking making homemade soap with pretty swirls and soap cupcakes that were more decorative than anything else and spending our mornings at flea markets. I am happier with the baking business. One of my recipes we use you can find under recipes for No Knead bread and vetkoek. We make a beautiful smooth Peppermint tart, a milk tart, Malva poeding and koeksisters. For us it is about baking fresh and getting it to our customer within hours of making it.

Maybe not like in Canada I gather where our house guests come from. Tales of having to dig yourself out just to get to your car. landing on your backside more times than she could count. Fishing though a hole on a iced up river, sounds like they enjoyed that experience. But it was all new experiences for them too No way that is not for me. We are childen of Africa and can't cope with that sort of weather. I like the sun to warm up my old bones, in that way I would do well as a cat basking in a sunny patch somewhere. I like working in my garden, my retreat from this world. I planted a summer veggie garden cause that is what I know, will grow for me. and it did grow and produce well. My fight with the monster weeds of all sorts was worth it. Beans were cut and frozen, some made it into bottles. Zucchini grew into monsters which I grated , drain the excess moisture and froze to use in fritters and slices and muffins during the cold winter. Potatoes were used fresh in our meals cooked either whole and ate with butter or in a stew. nothing nicer than fresh potatoes. and spinach pie, which we had a lot of during the summer. Yumm
I regret not having a bigger veggie garden but will add beds during the winter and get them ready for spring planting. Learnt gardening here is different than what I am used too. Still got carrots and spinach in grow tunnels, which I bought at our local clearance shed. Great to protect them from the frost and also the chooks who had a feast on them before I closed the beds up with the tunnels.Motto for next growing season : get the seed in early for that I need a small green house or mini hot house. According to the weather man due to hit North Island as we speak. We are just south of Auckland, in the Franklin region and expecting 150klm winds and heavy rain. our driveway at the gate floods but so far we have been lucky in the storms we had this month. How bad this will get who knows.
Our old villa we are staying in was built in the 1880's one of the first homes built here when the town was first established. A sleepout/granny flat was added with a breeze way. Thank goodness someone put a roof over it. the old wood stove was removed and a wood burner was put in it's place. the kitchen was extended and now we use the old space as a small lounge/home office/kitchen wish it was just a little bigger. but it is where we hang out most of the time. There is an old dairy which is now stables and wash bay for the horses and a small tackroom. Unfortunately this home has seem many years of neglect and tenants
When we moved in about 8 months ago the garden was a huge weed invested area, wild turnips, thistles, celery and dock .. you name it we had it. Not liking chemicals weed spray I started hard pulling them and and letting them dry out on the concrete dairy path. Hopefully i got to them before they set seed esp the wild turnips. Weeding will be an on going battle but regular mowing should also help a lot. Digging new veggie beds was my first task so I set aside a sheltered area and as it turned out previous gardeners thought it was a good spot too. It was also the old pit and as I dug old pieces of glass and pottery and china showed up. I collected as much as I could find, washed, sorted out beautiful coloured glass into bags. I found old treasures, worthless to everyone else but they told me a story of times gone by. Maybe one day I will find out who lived here.
Sorry got a little side tracked there .. we had a good crop of climbing beans, which I made into curry beans and bottled about 8 jars, a old South African recipe. You will find the recipe in the blog under recipes. We eat freshly dug up good crop of Nadine potatoes oh so fresh with butter. Zucchini in abundance, grated, drained the liquid off and filled ziplocks bags and put them in the freezer. Made pasata with most of the Roma tomatoes. We made beautiful spinach pie with lovely healthy spinach leaves. ATM we have sweet potatoes/kumera, pumpkins, peppers,celery, lebanese cucumbers and chillies. now something I have never tried before is an late garden, sowed carrots and pasnips and covered them with a plastic grow tunnel. the seeds have all come up. now to see if it will work for the winter. Next spring I plan on doing a bigger garden

Been ages since I last posted, so much has happened since then. Our beautiful little grand daughter Elena has had her first treatment for her little club feet starting the first consultation with the Specialist. They put casts on changing them every week for a new set. and then Drs did the little operation and put the next lot of casts on. By the 3rd week they had her in the boots and calipers. According to Mum she cried a lot that day which would have really unsettled everyone. Elena has to wear her boots 23hrs a day, only getting 1 hour to have her bath and a cuddle without the boots. Elena is looking more like her Italian side of the family with every photo I see of her.
I finally have finished her Granny square baby blanket and a zigzag striped blanket and just need to give them a good wash and send them off to Brisbane. Never taken me this long to finish anything, lucky winter is not over yet. We did a quick trip up to the farm this past weekend, It sure was colder up there than here in Mulgoa. The frost sat on the windscreen you could not even see through it. We had to pour water over it to clear that up and turn the wipers on. The blades of grass were covered as well. no wonder I had to get an extra blanket out in the early morning. Having curtains up would have helped to but I feel while people can see in they are less likely to want to break in and steal as it looks like it's just a bed with a really long cover over it. It's what they can't see under the bed ... And as always I brought a few more supplies up and 20 bags of mushroom compost. I was hoping we would have stayed another day but no, he had appointments for Monday that could not wait.
On Friday night just as we walked in from work and running around the whole afternoon with shopping, our neighbour/landlady was going into a panic again. One of her ewe's lamb was stuck in the birth canal and she was frantic yelling at her husband to do something. Poor bloke had to assist me pull out another of their lambs the week before too only the ewe would have no bar of that one afterwards, and so we learn from our mistakes. But hey Fernando had to help pin this one down for me again, first he had to set up some lights cause the ewe had chosen the worst dark spot to deliver her lamb. The feet and head were in the correct position and had been poking out just enough for me to grab hold of one leg first and pull a little to release the position just a little then grab both legs and pull him out. And what a whopper, he was huge no wonder mum just could not get him out by herself. Sy took to him straightaway ... So far they have 3 sets of twins and 4 singles and 2 ewes to go. We sold 2 and lost 2 old girls last year so this year we should only have 4 lambs with is just fine by me. Mr Rowan sure did a fine job servicing the neighbourhood's girls first before he made time for his own girls. So taking that into consideration we should start having babies by the weekend coming.
There is a few more things I would like to share with you but that will have to wait till next time

Here it is no different, animals are born and animals die, those are the facts of life. Harrry the rooster I blogged about a while ago passed on too. Now Dennis rule and Clyde the 2nd, being only a little silky rooster has to take second place. He has his two girls to look after.
Sadly we said good bye to Remi the pony this morning. He was a gentle boy who love his carrots and apples. Remi was just a 12 hands tall if that. I found him standing inside the dam where he was halfway sunken in the mud and freezing water. Exactly how long he had been there was not known. But I know he was absolutely frozen. The Blond One with her long legs dragged him out with a rope and a material sling around his bum, a lot of shoving and pushing we finally get him out and walked him to the sheep shed. She washed his legs and belly, dried him off with old towels and wrapped him up in an old blanket taped up with packer's tape. I had by that time returned with 2 borrowed horse rugs/blankets that a kind hearted customer from our produce store, which she took out of the back of her ute, when she heard what had happened. Remi was very cosy with the rugs on and had by morning warmed up nicely. Remi had recovered enough to chomp on some apples and his Lucerne by night time. But when I visited with him the next morning he had a huge temperature and was down on his side, eye's glazed over and gasping for breath. It was over even before the vet had arrived.
So all things come in 3's, and sadly that was once again proved correct. Friday evening Honey the tabby cat suffered a stroke, her back legs were affected and the emergency vet explained that it was really best to put her to sleep. And that was what The Blond One decided to do, it was her cat.

Welcome to Elena Grace, is she not the cutest little bub you seen for a long time. Not even 2 weeks old yet and already creeping into our hearts. What a peaceful little baby, she loves feeding time, and a light burping session, pooping and sleeping. Enjoys her bath time too.
We drove up to Brisbane just to meet Elena and her Nonna Rina, yip Nonna is Italian for Grandma and would you believe it we even share the same name. Mom and Bub are doing well after a difficult birth. Dad Is taking it all in his stride, lending a helping hand with changing diapers, burping and soothing bab to sleep. How about 2 birds with one stone ... Easter weekend friends of our joined us at the farm with their 10 year old , which was great cause our grandson Luke is here for the holidays from Brisbane. Very little work got done for a change, except mowing the property and enclosing the doggie deck and bathroom for extra sleeping space. Turned out a very enjoyable weekend I must say. On the way back to Sydney we stopped off and did a spot of strawberry picking, yummm fresh strawberries.

The boy's and myself went looking for fat earthworms for bait and I was impressed just how fat the worms were in the veggie patch. We went down to the river around 5pm not quite sunset when the water just came alive with fish. That gave Luke lots of time to learn how to cast his line thanks to Grandpa showing him the ropes. On his best cast he caught the first fish a small bass which was a kiss and release cause it was undersize. I caught a fair sized bass which we kept. in total 3 returned fish will have the chance to grow big.

Luke was doing real well, we did have the odd sinker and hook get stuck in a snag and lost them. Today Luke and myself went fishing again at the Nepean River. We bought a packet of prawn bait to try out. And we used a float after Luke lost the second set of hook and sinker.

But not to many nibbles at the bait , Except this Eal which was the last thing I wanted to catch. It was a lovely few hour we spent together with a packet of lamingtons and chips and a cold drink.

Until a fateful day Harry injures his leg protecting his girls, he wins the fight but loses his dignity. The lady of the house can't do much for his broken spur and bust up leg. Time will heal those wounds and save his dignity, Harry crows no more. His girls left to protect themselve now.They stay close by. The only crow now is the young rooster just practicing his stuff, no father figure to keep him in check no more. Until now he has no name but Dennis comes to mind when he sees the lady of the house. Dennis starts winding up the girls as his testosterones work overtime like any teenager rooster. He pesters every single hen within his sight. There is little Harry can do about that. A new order is slowly starting to take place, one where Harry is not the Boss anymore.
It's time Harry need to heal that leg, first Mom used to carry him out to sit in his shady spot under the tree, where he could keep and eye on his girls. Slowly Harry is starting to hobble along again like an old man with a walking stick. Mom still scoops him up when he's to slow getting back to the chook palace before bedtime. But Harry is hanging in there waiting for the day he can sort out that Dennis the menise, show him who owns this here backyard!

As if I don't have anything better to do right now, when I should be cleaning the house, washing the last few loads and packing to go on holiday. Well I have decided to make us stick to the original plan and leave on Friday, Giving me enough time to make my jam and dry another batch of onion in the dehydrator and bake a tray of biccies to take with. Not head off half assed as hubby suggested as he has now finished what he had to do. Well that was an post I had started just before we left on our working holiday. Continue ... We are having some much needed rain in Mulgoa (West of Sydney) THE GRASS WAS JUST ABOUT DEAD, the sun baked it good. the only bit of green was where the laundery water was diverted onto the lawn. We had been buying bails of lucerne and bags of my special chaff and pony mix for the animals for a while now. While the rest of Australia is having fires and other part are flooding we have had wonderful heavy rain filling up every pond all along our street, from one property to the next ... a chain of ponds over flowing, the ground soaking up every drop ... new blades of grass already turning the fields green. lucky we had no flooding into our lounge or the house, only because we were ontop of the pool as it filled up to the rim, drained a good 6 inches out into the field. I am sure that did help that we were spared. Pool watch continued until the early hours.
26th January was Australia Day, really I hear you say, no post to celebrate! While everybody was off having a BBQ and waving a flag.

The brides mum, my Japanese friend Pina was putting on her lovely blue dress and getting her hair done, looking stunning. And then the bride's Japanese grandfather walked her down the aile to the waiting groom. The church was packed with family and friends. At the reception a photo booth was provided to take silly photos of the guests. (must be a new trend)Like weddings go, it was after midnight we got to bed.

You can't say we did not work our little butts off the last few weeks. George admits we did just great getting so many jobs ticked off the todo list. We had a week off to rest and had to be back at the farm to recieve the delivery of roofing sheets we had ordered. The weatherman had predicted rain and only a small gap of fine weather our way. The section needed to be prepped, old sheets off, a small deck built only because it lended itself to make a cosy corner for the doggies to sleep out of the cold and rain. The corner post had to hold the roof up

The bathroom frames had to be erected and squared up. New roof trusses had to be screwed into place, that in itself took a whole day to do, all double jobs as the old had to be removed first. At this point I need to mention a beam had fallen and nearly sent me off to dreamland. I do have a nice shiny bump to proof it. trouble come in 3's they say and that day was no exception. next I tripped and fell om my bum walking backwards pulling and pushing the big beams,just lucky it was a soft landing. Then up went the sheets all 7.70mtr of each sheet, after I wrestled them in the correct position. It took both of us to lift them up and push the sheets up.

And then another window had to be installed in the bedroom, it was 45 degrees and we were dying cause there was no breeze through the bedroom. Once again he wanted to go the easy way but then the window would not have been centre. I won that one. The red cedar cladding had to come off and replaced with cypress cladding. How we managed to get through all this work in 10 days I don't know but we did it.

Awhile back we had bought a few sheets of new corrogate roofing for this side of the cottage, being a little to long they barely managed to fit over the ute without the cops pulling us over. But we got them up to the farm alrught tied up on a few 2 x 4's to give them extra support. This roofing project was the first item on George's to do list.

First he had to remove the doggy roofing and so called roof trusses, and build new ones. Of cause I had to make his life difficult by wanting a storage compartment in the roof. Somewhere to store my empty fowler vacola bottles, misc stuff and years supply of toilet paper.

The compartment is accessable from inside the kitchen/diningroom. He still needs to put doors on the front. Always wanted a large kitchen with a table and chairs to have meals at, just like my stepmother had. We would visit around the table, everyone used to help with laying the table and it was just such a lovely atmosphere.

The kitchen cupboards are also still waiting to be installed properly, that will be done as soon as the bathroom walls are up and the new roof trusses on that side of the cottage are replaced too. We are expecting a delivery of corrogated sheets for that side to be delivered as they are nearly 8 mtrs long on the 11th January, we will be leaving for the farm on the 10th with the gutters and more corrogated for the next project he has been working on.

The new roof extended over the small deck making it a lovely spot to sit in the morning. By afternoon sun filters through the gum trees and manages to bake onto the deck. George has promised to put a lattice screen up to help solve that problem. another job for the to do list.

This was never on the list George said but it was something that was needed esp after finding 2 snakes in one day. Racks to store building material off the ground, solid as a rock and pretty strong to hold all the materials. As usual I had to add a little supprise to the project, a lean too for the sheep with gutters to catch the rain. I was given a lot of small corrogate offcuts and thought they would work really well here.

Looking good so far George, he works hard but then so do I being his apprentice hold here, bring that, fetch this, switch off the generator, start the generator, hold the ladder and then still doing all the painting. We even concreted 4 posts and hung the gate. All this working with the sweet running down, consuming bottles of water by the dozen. This Ozzie sun can get hot, by 10am it's nearly 38 degrees already.

Christmas day we were installing the pink carpet in the bedroom, a hand me down from a friend who had bought a new home, pink was not his colour and being in a near new condition offered it to me. Yeah thank you I will have it. Carpet laying will not be a job we want to repeat in a hurry even if this one came out great. Another small job that got done was the hole in the kitchen floor. Finally it got closed up!!!And then he started on the wardrobe ... by this time we were both ready for a proper shower and a good hair wash, George was missing his remote and the cricket so a few days at home resting was in order. I did miss my washing machine, not so much fun doing the rain dance in the blue tub with the washing soaking from the night before, no you can have that thank you. As I mentioned before we have to be back at the farm on the 10th

found this little fella sitting in a black plastic pipe, see we disturbed his home and was not aware he was in the pipe, only after hours in the hot sun he stuck his little head out just enough to catch my eye. Quickly relocating him into a shady place near the bird bath.

Baby possum will have to relocate too along with two bigger possums living in our roof. Right now there are just to many access points to the roof to get them to move on. Not even the banging of hammers and working on the new roof seamed to bother them to much.

3 tablespoons white sugar
1 tablespoon ground cinnamon
Cookies:
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup dark brown sugar, packed
1/2 cup white sugar
1 cup salted butter, softened
2 large eggs
2 teaspoons pure vanilla extract
Preheat oven to 300 degrees.
In a small bowl, combine sugar and cinnamon for topping. Set aside.
In a medium bowl, combine flour, soda and salt. Mix well with wire whisk and set aside.
In a large bowl, blend sugars with an electric mixer set at medium speed. Add the butter, and mix to form a grainy paste. Scrape sidesof bowl, then add the eggs and vanilla extract. Mix at medium speed until light and fluffy.
Add the flour mixture and blend at low speed just until combined. Do not over mix. Shape dough into 1-inch balls and roll each ball in cinnamon-sugar topping.
Place onto ungreased cookie sheets, 2 inches apart. Bake for 18-20 minutes. Immediately transfer cookies with a spatula to a cool, flat surface.
Yield: 3 dozen

Another week gone by without a post, not good! anyway I am back, been very busy with George and his medical stuff. We have been to see the eye doctor twice in the last 2 weeks for treatment, just another round of ongoing injections and lazer, all to combat this wonderful desease called Diabetese. Without this treatment he would have been blind by now. Going blind is just not an option for George right now. We had a visit to the Clinic thrown in there somewhere as well. His insulin doze has been upted as well. Offically he is on leave from the 14th which was yesterday for 6 weeks, that would be the longest holiday ever for him but as usual he is working on something, meaning our trip up to the farm will start later. we were due to leave today but now he has a few urgent things he needs to attend too.

Now we will be leaving in the morning for a quick trip, off load and head straight back to Sydney. Actually I am not complaining about that at all cause now I get to take more stuff up. This trip will be all the 6x9kg LPG gas bottles, a lovely old cast iron garden setting some of his wood working machines, another box of medical supplies, a tube of art and school supplies for the secret stash and a box of reference books. George will question me on that ... why the books? ... I just know it. He's lucky I am not aking the book case as well, I would if there was space trust me. Every corner of the cottage has got something stashed away, it's going to be quite a shock to him when I need to unpack so he can lay the carpet in the bedroom. But then If only the cupboards were built it could all have a home, well that's my excuse and I am sticking to it.

Another batch of butternut is dying in the dehydrator ATM and just to proof cats are useful. This is Angel, she turned out to be a boy on closer inspection, a stray arrived here with his bags packed and not leaving. It took a while for all the other cats to accept him and for him to get comfortable with us. Angel is the kind of cat that does not liked to be picked up unless you hold his back legs up close, even then his tail is smacking from side to side. This could be the reason he was dumped. Not to crash hot on strange kids either.

It was a curbside find and here We was hoping the motor still worked but the pump might not, no such luck it was the motor. His other problem was getting the drum out, the machine won. Then my mate Alby had to buy a new washing machine for his wife, the pump had packed up on their machine, which was lucky for us! Now all he needs to do is get started on it.
The chooks have grown to small turkeys again and so I decided no more "Off with their heads" and we did it the old fashioned way. Thank the Lord there were only 11 birds left. We processed 8 birds on Sonday. The skin would have been tough anyway so we skinned them instead of plucking them properly. Worked great. Got 20 good sized meals for my freezer. ATM the stock pot is full of carcasses cooking away. while the first batch is cooling.Had this brilliant idea to fill up large muffin trays with stock and freeze them and fill a ziplock bag, taking out just what I need. I did it , success atlast with the pumpkin, butternuts work better. Dehydrated them until they were dry enough to crack. The reason I wanted them so dry was so that I could put them through the blender and make pumpkin powder/flour, what ever you want to call it. Well it must be true, Hubby says I am like a dog with a bone when I start something, never give up until I succeed. Now to carry on and prepare the other 6 butternuts I bought..The last of the Japs I will just cook and put in ziplock bags for the freezer, ready to make pumpkin scones or something. What do you do with all that stale bread, hubby likes Helga wholegrain and I like white toast, and when you buy 2 for $6 , you end up with a lot of bread. I used to dry it for the sheep but they have lost out. I made bread crumbs instead not just ordinary bread crumbs but with a little home dried and ground chilli in it. now that should put a zing into the next crumbed lamb cutlet or fish fillet.

My mission to recycle just about anything I can lay my hands on. A rag rug has given a new lease of life to some old sheets, table cloth, hubby's old Yakka work shirts, old jeans and a hidious pair of green pants. (what was she thinking when she bought those pants)Cut it all into strips, and rolled the balls, and started with the smallest lot first. I thought making a round rug would be the way to go maybe next time I would go for an oval shape. Keeping to 3 rows of one colour has worked out fine, increasing 1 stitch every 14 stitches on every second row. Just keep checking that you don't end up with a wavy row. Then skip that increase row. I am on my last row Atm. The rug is going to the farm after a good wash and dry. It sure is heavy!!

I can see myself going through the linen cupboard soon for more fabric yarn to start that oval rug, a little more colour coordinated. My mate Alby brought a whole bag full of old towels, his wife throw out, they should come in handy for the inside layers for pot holders for the sewing ladies. Bargain time as pumpkin normally sell for much more. I half filled my biggest pot with water and heated up the water to boiling, added one whole pumpkin at a time cause they were really big, flipped it over after 15 mins and cooked it a little more. The skin went soft and I must say getting the pumpkin out of the pot was another story, did not want to throw out the water, but cook the next one in the same water.
Let them cool on a double folded old towel under the wire rake, you could use a few layers of paper towel, the pumpkin leaks and makes a good mess. Cut the pumpkin in 1/4's and scooped out the seeds into a large container and then the flesh into another plastic container adding the skins into the seed container. While working the pumpkins I noticed a lot of moisture still coming out of the fleshy pumpkin, so transfered it to a colander to drain some more. It was real late so decided to just cover it and let it drain for the night.
Morning came and I filled up the dehydrator's trays and it's looking good so far. The seed and skins I added to a pot, added left over bits of meals over the last few days from the fridge, stuff that looked a little limp from the veggie tray. pasta, a bag of chicken necks and boiled the lot. yummy meal for the doggies tonight. In the meantime the dehydrator had been going for hours.
But some how the pumpkin turned to leather, you know the kind of fruit rollups kind of leather I could not get it to crack from dryness. Now I don't get defeated so easierly and have decided to try again, and purchased 3 butternuts. Maybe it is the variety of pumpkin that just does not work that well. <br />3/4 cup All-Purpose Flour
<br />

<br />1 package (8 ounces) Cream Cheese, softened – On myfirst attempt the Rancher and I thought there was to much cream cheese frosting for our liking. I decreased the cream cheese to 6 oz.

<br />1 cup Powdered Sugar – I used 3/4 cup
<br />
<br />6Tablespoons Butter, softened – I used 4 Tablespoons
<br />
<br /> 1 teaspoon Vanilla Extract
<br />
<br />Walnuts
<br />
<br />Additional Powdered Sugar to sprinkle on towel.

<br />Directions:

<br />Preheat oven to 375*
<br />
<br />Line a 15-in. x 10-in. x 1-in. baking pan with waxed paper; grease the paper and set aside.

<br />Sprinkle a thin, cotton kitchen towel with powdered sugar and set aside.

<br />For Cake:
<br />
<br />In a small bowl, combine the flour, baking power, baking soda, cinnamon, ginger, and salt.
<br />
<br />Beat eggs and sugar in a large mixer bowl until thick.
<br />
<br />Beat in pumpkin.
<br />
<br />Stir in flour mixture.
<br />
<br />Spread evenly into prepared pan.
<br />
<br />Sprinkle with nuts. On my second try I sprinkled the roll with nuts after I frosted it, this is my preference.

<br />Bake for 12-15 minutes or until cake springs back when lightly touched.
<br />
<br />Cool for 5 minutes. Turn cake onto a kitchen towel dusted with confectioners’ sugar.
<br />
<br />Gently peel off waxed paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack.
<br />
<br />For Filling:
<br />
<br />In a small bowl, beat the cream cheese, 3/4 cup powdered sugar, butter, and vanilla until smooth.
<br />
<br />Carefully unroll cake; spread filling evenly.
<br />
<br />Roll up again.
<br />
<br />Wrap and refrigerate at least 1 hour.
<br />
<br />Dust with powdered sugar before serving.
<br />
<br />May be frozen for up to 3 months. Remove from the freezer 15 minutes before cutting.

Pays to do more research before discarding the leaves and small stalks to the chooks for a snack, next time I will dehydrate them too. We aren't big celery lovers so it would be just for soups. I did blanc the celery after cutting them.

I like to cut my onion in wedges and large diced pieces, that turned out a huge success. Onion is like one of the main ingredients, just can't cook without it. So no little 1kg baggies of onion but big 10kg bags @ $7.00 from the veggie shop. Can see a lot more onions and tears.

Now for the bargain and it's got nothing to do with food. Here's the story ... I must first confess to being a curbaholic, my eye's wonder to the curb if there is a council cleanup, sometimes there's really good stuff. But never will I stop if hubby is with me except once I got him to stop for a huge cat scratching post, I had seen them at the petshop and nearly keeled over when I checked the price tag. One day I picked up a shower base, it was brand new still had the protective plastic on parts of it. The home was just newly renovated, actually the builders were still busy there, and someone had chipped a tiny bit off the side. So it came home with me, saving a whopping $200. I dug it out and gave it a good clean while we were build the bathroom the other weekend, expecting hubby might not want to install it but he could not even find the chip until I pointed it out to him. Well today we bought the shower screen that would fit the base, for way less than what we had bargained on. I decided to go with white floor and wall tiles, nothing fancy. But there is no rush to buy the tiles yet. Colour will come from the towels and bathmats to cheer it up a little.

Sure been giving that dehyrator a work out, it's been running just about non stop for the last week or three. First it was sweet potatoes until my huge jar was filled up, then I moved on to carrots. I have lost track of the packets I have bought @ $1.49 ... worked out 3 packets of 1 kilo unpeeled at a time, fit just nicely on to the 5 trays. First I peel and then slice them, then blanc them, and then drain them in a big colander. Pack each tray nicely , place the trays in the dehydrator and switch on, easy as.

It is ready not that hard and so far nothing has gone black on me, not even the sweet potatoes. And that has got to do with the peeling, esp the sweet potato which has two layers to the skin, get to the fleshy part and your chips woun't go black Becky. I noticed while they were cooling off that the outside started blackening, using a knife I cut off the 2 layers and the inside was beautiful. Ready to be sliced into 1/4 inch rings/chips.

Aren't these carrots just to cute for words. My glass jar is not full yet so I guess another 9 packets should do the trick. I have tested these carrots out by add in a handfull and pouring boiling water over and yeah they swell out nicely again.

Now these yummy orange and lemon sliced took a little long to dehydrate, maybe cut thinner is the way to go. Added to homemade lemonade as a garnish will give extra taste if not will look very pretty. But they are yummy just like that too.
